Loïc Menzin, passionate chef, has embodied culinary excellence since his dazzling beginnings. From the age of 15, he distinguished himself by obtaining his CAP as a chef with honors, thus becoming the best apprentice in Lorraine. His thirst for excellence pushed him to continue his studies with a specialty in restaurant desserts, then to obtain a professional chef's certificate with remarkable distinction at the age of 18.
With a career marked by hard work, Loïc accumulates working hours, seeing each day as a competition to win. His career led him to collaborate with Michelin-starred establishments, entering the FERRANDI school then the GRAND CHOCOLAT VALRHONA school in Thain-l'Hermitage and perfecting himself in the art of chocolate, even obtaining the title expert on the subject.
He then joined Françoise Mutel's brigade in the prestigious Michelin-starred restaurant 'La maison dans le parc' in Nancy from 2011 to 2017 as pastry chef.
However, a tragic event shakes up his perspective on life, causing him to reevaluate his priorities. After taking a step back from his career, and following an \"unforeseen\" opportunity, Loïc decides to dedicate himself again to the project that has been very close to his heart since his childhood: opening his own restaurant.
Guided by his passion for cooking and his desire to share emotions through his dishes, Loïc wishes to offer a transparent and theatrical experience to his customers.

At 31, Thomas Signoret brings an international touch and diverse expertise to our kitchen team. Dynamic, persevering and passionate, he embodies culinary excellence in every service. Endowed with boundless creativity and a remarkable spirit of initiative, Thomas is a valuable asset for our brigade.
Trained within the largest institutions in the hotel and catering industry, Thomas began his career as a commis chef before heading off for enriching international experiences. From New York to Australia, he honed his culinary skills and expanded his gastronomic horizons.
His stint as a line cook in New York, working for Daniel Boulud's Dinex group, and as chef de partie in Australia, at the Wink 11 restaurant & Wine Bar in Cairns, testifies to his adaptability and his ability to excel in demanding and multicultural environments.
Back in France, Thomas continued his career by occupying positions of responsibility, notably as chef and pastry chef, where he developed his creativity and leadership. Since October 2020, he has been using his international experience and his passion for cooking as Assistant Chef in an establishment in the region, he has joined us, thus contributing to the gastronomic excellence of our establishment.

Since June 2018, Marc has held the position of manager of two restaurants in the region. His strategic vision and leadership contributed to the development and success of these establishments.
Previously, Marc held senior positions at renowned establishments such as the Grand Hôtel de Bordeaux et Spa, Domaine Gayda in France, and the One Aldwych Hotel in London, where he successfully managed the catering operations. His expertise in recruitment, team motivation and financial management has been a valuable asset to each establishment where he has worked.
